After a long, cold winter, and a rather dismal spring – something is stirring. In the far reaches of South Australia that seemingly mythical aussie heat is rising. As the buds burst on the vines of the Barossa Valley, this heralds an arrival. Summer is finally on its way and what better way to unwind than by sipping, or in this case licking, a gin and tonic popsicle.

Reminiscent of your favourite childhood refresher, there’s a little extra spice with these adults only icy-poles. Tell the kidlets to bugger off and enjoy this on your own, blissfully swinging in the hammock.

We recommend using a clean gin for this recipe – our Barossa Generations Gin would be ideal (hint, hint).

By adding the savoury tones and fruity notes of this Barossa born gin to your popsicles, the ultimate combination of gin and tonic and few grapefruit slices will keep you and your friends coming back for more while simultaneously making you slightly drunk.

Poolside, beachside or simply chilling under the air-con, there’s no better way to keep cool than with one of these gin-uinely awesome frozen treats.


The Ingredients
3 cups tonic
3 tablespoons gin
¼ lime, juiced
½ grapefruit, juiced
½ cup grapefruit slices
Makes: 10
Mix together tonic, gin and lime and grapefruit juice
Place grapefruit slices into popsicle moulds, then pour in tonic mix.

Freeze overnight before serving.

Note: Because there is gin in these popsicles they do not freeze as well as ‘normal’ popsicles. They still freeze solid but melt a little faster.
